Plant sugar

Ingredients
- Five kilos of sugar cane juice.
- For two and a half liters of water.
- Two large white eggs.
- Half a teaspoon of Tartar salt.
How to prepare
- Plant sugar is extracted from five kilos of sugar cane juice.
- The sugar of the plant melts in two and a half liters of pure water.
- Boil the sugar with water for a quarter of an hour.
- Add egg whites during boiling.
- Stir until foam floats, and must be removed.
- Leave liquid on the fire to become rigid and cohesive.
- Add a small amount of “salt Tartar” or so-called Atarain Tartarat.
- Add five grams of sodium benzoate to the previous mixture.
- Mix well until smooth.
- Turn off the gas, leave the liquid until it is frozen in the desired form, covered with a perforated wooden cover.
- Mix in chopsticks or cotton twine for 15 days.
- The liquid is frozen on the threads or chopsticks after the expiry of the period. The “plant sugar” is broken because it is frozen due to exposure to the air and the grains of the plant sugar are formed.
